Ever since my best friend, Paige, introduced me to this drink at my 30th birthday, it’s been my go-to winter cocktail for large parties and casual get-togethers alike.
Inspired by Employee’s Only’s Billionaire Cocktail, my version uses a lower proof bourbon and straight absinthe. For large parties I like to whip up a 30x batch a day in advance and chill it, then set up a beverage station where guests can serve themselves from my crystal beverage dispenser. (This dispenser looks amazing and doesn’t drip! A must when your drink has pomegranate juice in it.) The homemade grenadine recipe makes a ton and keeps well for up to 3 weeks in the refrigerator.
The Eccentric Billionaire
ingredients.
2 oz Bulleit Bourbon 10 year Frontier Whiskey
1 oz fresh squeezed lemon juice
.5 oz Powell and Mahoney Simple Syrup
.5 oz Employee’s Only Grenadine (do not use store bought!! Ick.)
.25 oz St. George Absinthe
1 sliced lemon wheel for garnish
method.
Pour all into a pitcher, swirl with a cocktail stirrer and age it (i.e. chill it) for 8 hours.
Strain into a single old fashioned glass, over 3-4 1″ ice cubes. Float a lemon wheel on top. Serve to happy guests.
